Manufacturing products in China and selling them on Amazon.com has become less profitable with the Trump tariffs in place. Is private labeling still a viable strategy for someone who is sourcing from China and selling them on Amazon.com (USA)? Are there other private label strategies to consider that will still be profitable with the Trump tariffs in place?
Yes.
Sell products in their own jurisdiction.
In other words, sell... US products on Amazon.com then Canadian products on Amazon.ca, etc...

It depends if the price of your product is still competitive with other products or if your private label offers a benefit that other labels do not. I dealt with this with a commodity product here in Brazil. There is a formula I use to calculate the sales price after including margin and import duties.
